Ingredients
3 medium sweet potatoes
2 Tbs vegetable oil
1 tsp salt
1/2 tsp paprika
1/4 tsp chili powder
chopped fresh cilantro, for garnish
Directions
  1. Peel the sweet potatoes. Cut into large wedges. Bring a large pot of water to a boil. Parboil the potatoes for 5 minutes. Drain the potatoes, and pat them dry. Place on a baking sheet. Toss in the oil to coat. Heat a grill to high.
  2. Place the potatoes on the grill. Cook for 5 to 7 minutes, turning once. Time will vary depending on size of the wedges. Remove from the grill. Combine the salt, paprika and chili powder. Sprinkle over the potatoes.
  3. Garnish with cilantro. Serve with chipotle mayo or your favorite sauce.
